Domori is an Italian company that has been devoted to making fine quality chocolate since 1994. Domori prides itself on the research undertaken to renew heirloom cacao varietals, study new hybrids, and graft cacao clones to ensure that the rare criollo cacaos live on to produce sumptuous chocolate. Domori is very closely involved in the entire chocolate making process, from the cacao plantations to the factory, and in this way can ensure the highest quality, most pure chocolate. Most of Domori's chocolate does not contain soy lecithin, and some bars contain no added cocoa butter, as they perfected a technique which results in smooth, tasteful chocolate with minimal ingredients. All bars are made with flavour cacao (criollo, trinitario, or nacional). Domori was the first chocolate company to develop a tasting code to help their consumers better identify the unique characteristics of each chocolate.
